Green Yemeni fenugreek spread is one of the most recognizable symbols of Yemeni cuisine – spicy, fresh and addictive. It is based on fenugreek seeds that are soaked and whipped until they have an airy and creamy texture, to which garlic, hot pepper, lemon and coriander or parsley are added. The result is a greenish spread with a deep, slightly bitter-nutty flavor, a pleasant spiciness and a fresh aroma. Fenugreek is classically served alongside kobana, jahanun or warm breads, and goes perfectly with brown eggs and crushed tomatoes.
